In 2020 it will be on Saturday-14 th November.

Diwali celebrations may last for five days.

People decorate their homes and workplaces with designed electric lights or small clay oil lamps or Deepak.

They wear new clothes and give gifts of sweets to their family members, close friends, and business associates.

They enjoy the Fireworks in the evening in some areas.

Melas also organized in many towns and villages.



2.Indian Sweet Recipes For Diwali

2.1. Gulab Jamun:

Gulab Jamun came to the country from erstwhile Persia (Iran) when Muslim rulers started arriving in India and establishing their dynasties here.

These sweets are made of khoya, which is ball-shaped milk powder.

The khoya are deep-fried and dipped in a sugary syrup, which is usually flavored with saffron and rose water.

Then flavored with saffron, nutmeg, and nuts.

Some popular Indian variations of Shrikhand include Mango Shrikhand, Fruit Shrikhand, Kesar Shrikhand, and Popular Elaichi Shrikhand.

However, you can use crumbled khoya instead of milk powder to give a super creamy texture to the Malpua.

2.5. Kaju Barfi:

Firstly as you know -Kaju Barfi or Kaju Katli is an extremely popular Indian dessert recipe that requires only two basic ingredients – cashew nuts and sugar.

You can add other ingredients such as saffron (Kesar), rose petals, ghee and pistachios for flavoring.

It makes a wonderful festive treat that can be served to family and friends during Diwali.

A South Indian meal is incomplete without Payasam.

Semiya Payasam or Vermicelli pudding is prepared with dry roasting vermicelli in ghee.

The cardamom gives an appetizing aroma to the dish.

And then cooking slowly it in milk till or approx 20 minutes to develops the consistency of a pudding.

The main trick involved in Semiya Payasam is roasting the vermicelli till golden brown so that it develops a nice chewy texture and nice aroma.

You should be extra careful while roasting vermicelli because it tends to burn quickly.

2.8. Doodh Ka Peda:

Doodh Peda is a traditional Indian sweet and is served as a Prasadam during festive occasions.

The sweet is made from the combined mixture of khoya, milk, and sugar.

And flavored with saffron and cardamom seeds.

It has a semi-soft texture and mildly super sweet taste.

The sweets are garnishes with spices of pistachio and almonds.

Ingredients –

  • Ghee
  • Sweetened condensed milk
  • Milk powder

  • Cardamom powder
  • Rosewater (optional)
  • Pinch of salt (optional)

In this recipe, sweetened condensed milk and milk powder have been used instead of khoya to speed up the cooking process.

But it is important to mix the milk powder evenly uniform otherwise it can result in a lumpy dough and giving problem further.

Because it is a semi-dry sweet and then you can store it in the fridge for 5 to 6 days easily.

2.9. BALUSAI:

Well making Balushahi is very simple; there are only a few things that you have to keep in mind.

initially, I had a few issues when I had the first time making the recipe but I guess it was the second or the third time that I was able to decode the perfect Balushahi.

I hope you like this recipe guys and have a very happy and safe festive season.

INGREDIENTS TO MAKE THE DOUGH:

  • All-purpose flour – 250 gm / 1 Cup
  • Clarified butter – 80 ml ( less than half Cup)
  • Water – 85ml (a little more than half Cup)
  • Baking Powder – ½ tsp
  • ½ tsp Salt
  •  

INGREDIENTS TO MAKE SUGAR SYRUP:

  • Sugar – 2 Cups ( 500 gm )
  • Water – 1 Cup
  • Cardamom – 5 -6
  • Saffron – one pinch
  •  

2.10. RABRI RECIPE:

  • 2-liter milk
  • 1 teaspoon powdered green cardamom
  • 4 drops rose water
  • 1/2 cup sugar
  • 1 pinch saffron
  • 100 gm khoya.

How to make Rabri-

Step 1

Take a deep bottomed pan and add the milk.

Bring it to a boil.

Keep the flame low.

Continue to boil the milk until it is reduced to half a portion.

You must take full cream milk for this super recipe as it is richer.

Step 2

Finely grate the mawa or khoya and add to the milk. It is very important to grate the mawa in a way, no lumps remain or the taste of the rabri will be spoilt.

You must keep the flame low and at the same time stirring continuously.

As milk has a tendency to stick to the bottom and there are chances of its getting burnt.

This not only spoils the taste of this dessert recipe but also makes it look unappetizing with black burnt milk surfacing on the top.

Step 3

Now add the sugar and green cardamom powder and simmer till the sugar is completely dissolved.

Keep the flame low and stirring continuously with a ladle.

When milk is thick enough, switch off the flame and allow it for cooling.

Take saffron in one tablespoon of milk then dissolved it and pour into the rabri.

You can use chopped nuts of your choice at this point.

Add little quantity rose water and stir well.

Step 4

Keep aside to cool and refrigerate it for cooling.

Serve in an attractive glass or silver bowl garnished with the nuts of your choice.

2.11. Rice Kher Recipe:

There are a lot of different milk-based puddings in India and out of them Kher is one of the most-loved among them.

It is made by boiling rice with milk.

And some quantity of sugar and later garnished with saffron, cardamom, dry fruits, and nuts.

Kher, phirni and Payasam are all different variants of Indian milk puddings.

In South India, rice is replaced by vermicelli and the dish is called seviyan.

How to make Rice Kher

Step 1

To begin with, soak the almonds throughout the night and slice these nuts on a clean chopping board & keep them aside until needed again.

If you like the roasted taste then you can dry roast in a non-stick pan.

Step 2

Firstly keep pressure cooker on medium flame and add milk in it slowly with continuous stirring.

Allow the milk to come to a boil position, then add rice in it followed by cardamom and sugar one by one.

Using a spatula, mix all the ingredients slowly and systematically.

If you want your Kher to be healthy you can replace sugar with sugar-free or stevia.

Step 3

Then cover the pressure cooker with a lid and allow the mixture to be cooked on a medium flame for 10 to 12 minutes.

Step 4

After that open up the lid and reheat the milk mixture in the pressure cooker on high flame.

Cook until a thick and creamy consistency is obtained.

Serve fresh and hot to all!

You can garnish this delectable recipe with chopped raisins, saffron strings, sliced almonds, and nuts also.

Saffron adds a beautiful tint to this amazing recipe and adds on to the flavor.

2.12. Misti Doi Recipe:

Mishti Doi is prepared from boiling the milk till it is reduced to half and is thickened formation.

Later caramelized sugar or jaggery is added to evaporated milk to which curd or yogurt is added as a starter.

After adding the starter, it left for fermentation in a dry warm place which yields thick sweet yogurt or mitha dahi.

Being an Indian, curd or dahi is a compulsory & must milk product in my day to day diet.

Typically our meal ends with curd rice or just by consuming plain thick yogurt.

Basically, it helps to lower the body temperature after consuming heavy spicy food.

Once in a while, I try to make this sweet Dahi or Mishti Doi recipe and serve ourselves as dessert.

it is so addictive and trust me you would love to have it daily.

While the Bengali Mishti Doi recipe is extremely simple, yet I would like to mention some tips and recommendations for preparation.

Firstly, always use thick full cream milk for this preparation otherwise the curd will not thick.

Secondly, I have added brown sugar in this recipe, alternatively, you can use white sugar or jaggery also.

Finally, fermentation should be done in a warm dry place and do not disturb it by mixing.

Alternatively, you can also keep it in a pre-heated oven to hasten the process.

2.13. Sandesh recipe:

Bengalis are known for their love of sweetmeats.

Sandesh is one of West Bengal’s most popular Sweet.

Sandesh is traditionally made from chenna, a residue of curdled milk.

Some believe that the dessert was inspired by the cheese-based dishes at an earlier stage.

  Sandesh sweet recipe prepared with paneer and sugar.

Like any other Bengali sweet, even this sweet is milk-based sweet from curdled milk or chhana and then mixed with sugar before shaping it oval.

Perhaps one of the simpler Bengali sweet recipes which have a similar color and texture but on a dry side.

Sandesh sweet is also available in Bangladesh and known as pranhara but would be softer as compared to the Indian Sweet.

The other variation also includes cream based which is popularly known as malai Sandesh or malai Sandesh recipe.

Remember, always use full cream milk for any type of Bengali milk based sweet recipe.

Otherwise, chhana or paneer would not be thick and you would not be able to shape it and quality will be dropped..

Secondly, you can also use store-bought paneer for this recipe, but ensure it to be on the softer side.

Lastly, you can prepare a flavored Sandesh recipe by adding chocolate, mango pulp, vanilla, and even coffee flavored recipe.

  • 250 gm ghee
  • 1 1/2 cup Water
  • 1/2 teaspoon crushed lightly green cardamom
  • 1 1/4 cup all-purpose flour
  • 2 1/2 cup sugar
  • 2 tablespoon milk.

2.14. Ghevar recipe:

Basically, it is a disc-shaped sweet cake with porous texture and is mainly served by dipping it in sugar syrup or topped with milk rabdi.

This is a classic Indian sweet recipe and is mainly prepared during a festival like- Teej or Raksha Bandhan and during the winter or rainy season of north India.

The local halwai or the ones prepared in the store is made using special disc-shaped equipment on a large scale. and hence the confusion about its feasibility to make with household utensils.

However, we can prepare a good quality of ghevar can in a home with a good density and deep pan.

In other words, the ghevar batter is poured into such pans at a regular interval filled with hot oil.

Note that the quantity of batter has to be approximate of 2 tbsp.

And has to be poured at a height of 8-10 cm. otherwise, you may miss the porous texture to ghevar and also it may stick to the bottom.

During the entire frying process make sure it has to float and not settle at the bottom.

Furthermore some tips –

  • Firstly, I would heavily recommend sieving the Maida or plain flour before proceeding with the batter preparation.
  • Secondly, make sure to rub the ghee with ice till it reaches a thick cream-like consistency.
  • Basically, this step ensures to incorporate air bubbles with the batter and helps to attain the porous texture
  • Lastly, the ghevar sweet can be served with myriad options. it can be served plain with basic sugar syrup, or perhaps with mawa, rabri, malai, dry fruits, kevra and also sil1 1/4 cup Gram flour (Besan).

2.15. Soan Papdi:

Soan Papdi is an interesting sweet and has a uniquely flaky texture and that melts in your mouth almost like cotton candy.

Gram flour is a key ingredient used in the making of Soan Papdi.

Which involves a very elaborate preparation process.

How to make Soan Papdi-

Step 1

Soan Papdi is a delicious and light dessert recipe, which can be prepared at home easily without putting in many efforts.

To begin with, first, take a large bowl and then sift gram flour and all-purpose flour together.

Step 2

Then take a heavy saucepan and heat it over a moderate flame and once the pan is hot enough, add some ghee.

Then add flour mixture to the pan and roast on low flame till light golden colour.

Keep aside to cool a little, stirring occasionally.

Step 3

Prepare syrup simultaneously. Make syrup out of sugar, water, and milk. Bring syrup to 2 1/2 thread consistency.

Pour the sugar syrup slowly at once into the flour mixture.

Beat well with a large fork, do it till the mixture forms threadlike flakes.

Step 4

Pour into a greased surface or thali and roll to 1inch thickness lightly. Sprinkle the Elaichi and gently press down with palm and use it.

Let it cool and then cut into 1inch squares, wrap individually into square pieces of thin plastic sheet.

Store in an airtight container and serve.5

4.Conclusion-

Diwali is also the time for family reunions, lighting diyas, colorful rangoli decoration, and mouth-watering sweets for Diwali.
